Easy Vegan Red Lentil Past With Sundried Tomato Sauce

I am a huge fan of traditional pasta alternatives. If you can pack in some extra protein and fiber I am all for it. My husband on the other hand is a huge texture guy and he can be very particular when it comes to his pasta! I have had a hard time finding a spaghetti alternative that he will eat but I am happy to share with you guys that I finally found one! I made a super easy vegan sundried tomato sauce to go with it that truly only takes about 10 minutes to make from start to finish. This sauce is a favorite because it’s packed with veggies, it just happens to be vegan, and it could not be easier to make. Here is what you will need:
1 cup raw cashews
1 cup water
1 red bell pepper
6 sundried tomatoes
2 cloves garlic
1 teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dried basil
½ teaspoon salt
2 tablespoons lemon juice
For the recipe, all you do is roughly chop the bell pepper and throw all the ingredients in the blender until smooth. My kids love helping me make this recipe by adding all the ingredients to the blender. I love getting them involved in cooking because they always eat more when they feel like they have been a part of the process.
You can also top this sauce with cubed avocado and/or caramelized onions if you're feeling fancy, although the sauce is great even on its own. I sometimes add a pinch of red pepper flakes for a little kick if it’s just my husband and I eating it (my kids are not a fan of the heat so I often go without it). It’s an easy sauce to play around with and really make your own!
