Sesame Portobello Beef Tacos With Pickle Slaw
Lately we have been trying to find some ways to be a little healthier around our house. I tend to eat a lot of vegetarian friendly meals but my husband is a pretty avid meat eater. We recently found the perfect compromise (that actually does not feel like a compromise at all). We decided to try out a Blendetarian diet. Being a Blendetarian really just means that you blend mushrooms, that are chopped to a similar consistency as your meat, and mix them together. This reduces your meat intake by 50% and adds a ton of benefits to your diet.
There are a few reasons I have absolutely loved this concept. First, the mushrooms umami actually gives an added richness to the dishes which makes them even more delicious. Mushrooms also have a ton of vitamins and nutrients (iron, zinc, vitamin C, B6 & D are just a few) in them that we might, as a family, otherwise be missing out on. Our grocery bill has also been less and our eating habits are now more sustainable for the planet. Maybe best yet, this is a fantastic way to sneak something Ayla would maybe not normally eat into her favorite tacos without her even noticing!
We decided to adapt one of our families favorite meals to give this new diet a try. You can really choose any kind of mushroom you would like, but we started by blending Portobello mushrooms with our beef to create a “Sesame Portobello Beef Taco With a Quick Pickle Slaw”. This is a recipe you will definitely want to try!
Ingredients:
1/2 pound ground beef
4 oz portobello mushroom
2 scallions
4 radishes
1 cucumber
3 tablespoons white wine vinegar
2 tsp sugar
1 teaspoon garlic powder
4 oz red cabbage
1 tablespoon sesame oil
salt and peper
sour cream
package of flour tortillas
Directions:
-Wash and dry veggies. Thinly slice cucumbers and radishes. Add white wine vinegar and 1 tsp sugar to a bowl with cucumbers and radishes.
-Thinly slice scallions and red cabbage. Add oil to pan over medium heat and add scallions and cabbage. Cook until softened, 3-4 min.
-Chop mushrooms to a similar consistency as ground beef. Add mushrooms, beef, garlic powder and 1 tsp sugar. Cook, mixing well and breaking up beef into small pieces until browned. Stir in sesame oil.
-Spread sour cream on tortilla. Add Belnditarian mixture to tortilla and top with pickled veggies. Enjoy!
